This rosé adds a vibrant colour and floral note to the dining experience. The light vegan dish benefits from a fresh and vibrant wine of the same weight. The fennel and anise flavour in the wine, go hand in hand with the candied ginger and cress herbs of the dish. The length of the wine actually extends with this pairing, as well as its complexity - the herbs are even highlighted, and the fruity floral-ness of the wine create a beautifully balanced tasting experience.

About the wine: Hecht & Bannier Côtes de Provence 2016

Light salmon in colour, this dry and floral rosé is very food-friendly, making a great starter for a multi-course meal. Red fruit notes of raspberry, with fennel and anise, combine with some minerality, apple, and pear on the finish. A blend of Grenache, Cinsault, and Syrah that creates a very balanced, charming, and refreshing rosé; exactly what you'd expect from a classic Provence rosé at a good price point.
