About the food & Pairing:Salmon Tataki with Cucumber, Kiwi and Apple
Chef Liebman’s vibrant appetizer paired with this refreshing Champagne creates a perfect start for a magical evening! The dish’s kiwi and fresh cucumber compliment the crisp peach and strawberry notes in the wine, and the wine is subtle enough to not overpower the delicate flavour of the raw salmon. Visually, the salmon colour of this wine is a beautiful compliment to the colours on the plate. This artfully simple yet classic pairing was meant to be!
About the Wine: Billcart Salmon, Champagne Brut Rosé, France
From an independently family-owned, 200-year-old Champagne house comes this very attractive light salmon-hued wine. The nose is crisp and dry but the palate surprises with lively notes of red fruit, a good mouth-feel; on the palate, flavours of honey, maple, strawberries, and ripe caramelized peaches. The finish is crisp with notes of lime and red lady apple. It’s a seductive rosé that I could enjoy any time of the day; visually beautiful, elegant, tasty, and pleasing!
