The red wine-braised short rib has a deeply earthy, meaty flavour which pairs beautifully with the richness, earthiness, and bold tannins of this Morellino. The sweetness of the baby carrots bring out the smokiness and savoury aspect inherent in this wine.Chef Liebman's short ribs are powerful in flavour, yet elegant in the way it is presented. Power and elegance is displayed in the wine too.

About the wine:


Made by the talented wine maker Elizabeth Geppetti who is also known as The Lady of Morellino, this wine which is aged for 15 months in barrique (500-600 litre barrels), is mainly Sangiovese, with 2% Alicante and 2% Syrah. Notice violet and ripe blackberries on the nose with lush fruit, cassis, tobacco, spice, and smoke on the palate. This wine is full-bodied, rich, and powerful, yet elegant, blessed with silky tannins, a long, lingering finish, and good structure. Above all, the tension between power and elegance is what makes this wine a winner.
